Three Months!

So I know this post is not only long in coming but also late, sorry!

As the title says Griff and I have been married for three months now! It is so crazy and so amazing all wrapped together perfectly.

I'll try to update you all on the things we have been doing, so here goes:

We went to Canada not too long ago for the weekend to see the Muniz family be sealed in the temple. It was very intimidating for me as I was definitely a language minority but regardless it was an amazing experience. I also met a very amazing man; he knows an incredible amount about the gospel and well .... everything! We stayed with Tom for the one night we spent in Canada and by the time we left in the morning I was almost in tears because I felt like I was leaving a lifelong friend.

I'm now working as a nanny.... again (for those who didn't know). This job is far from anything I'm used to; I work for a doctor and she is on-call for 13-24 hrs so during that time I sit in my room in case she has to deliver a baby or check on a patient. Most of my time is spent on my computer which means I really have no excuse for never updating my blog but alas I am a student too :P

Griff lately has been extra sensitive and ultimately adorable. With his crazy football schedule leaving the house by 5am some mornings and not returning home till after 6pm practically everyday I have been missing him more than ever. Then add my shifts on top of that where I don't see him at night (my shifts either go from 7am to 7 am or 6pm to 7am four of five times a month). We both have class too so that fills the time in between and honestly makes me quite irritable and just a sobbing mess when I'm alone and he's gone, yes, I honestly cry when he leaves me. Anyways, he knows that I've been having a hard time with this situation and has become super-husband; he calls me when I'm at work and reads to me till I fall asleep, I have a really hard time sleeping away from him and this is the only way I fall asleep.
When, on the rare occasion, we have a day together we never run errands alone; it takes longer, yes, but time is so very precious and he knows that it makes the time apart less 'bad'.
I also have been getting stressed with school, homework, and housework; Griff will try to do little things while I'm at my night class so that when I come home we can have dinner and relax for a bit before we have to go to bed. One day in particular I was extremely stressed and needed to write a paper as well as finish the laundry and the cleaning so Griff told me to work on my paper and he'd "race" me to finish things around the house. He did all of the laundry and made me the best comfort food ever; a grilled peanut butter and jelly sandwich, it may sound gross but it is something my daddy used to make me and I haven't had it in years. It's like chicken noodle soup when you have a cold, it just makes you feel better. He knew I was stressed past my ears and starving and trying to get everything done so he just stepped up, he then told me to get cleaned up and took me to dinner 'just because'. I love him sooo much and I can't imagine spending precious time with anyone but him.

So I guess I should have named this post "I love my husband more than anything in the whole world" but I didn't :P

Dinner is Served!

I've found the perfect way to procrastinate homework! COOKING!!!! Yay!

Again I turned to my new friend Super Cook and today's result is Double-Baked Broccoli Cheese Potatoes :D

So simple I didn't really measure anything
you need:
  • potatoes
  • milk
  • cheese
  • garlic salt (optional) **Garlic salt happens to be my favorite spice**
  • pepper
  • broccoli
  • butter
First bake the potatoes: clean them and poke holes and then make a small/shallow cut all the way around so that it's easier to cut them in half later, don't cut too deep as it will make the guts kind of.... hard. then either bake them in the oven or if you're impatient like me use the microwave.

while that's going on mix a little milk; roughly 1/3 c per 2 potatoes, two dollops of butter (hey, I didn't say this was a healthy meal :P ), finely chopped broccoli; about a stem per potato, 1/3c of cheese, pepper and other seasonings to taste.

when the potatoes are done baking carefully cut them in half and scoop the guts in with the cheese and broccoli mix and mash mash mash! once it's mixed scoop it back into the potato skins.

Place in the oven at 350 for about 15 min and enjoy!

and I really do mean enjoy, I loved them! plus they're totally affordable on a college budget, yay for starving student meals outside of top ramen!!!

Cooking! YAY!

Ok so I was bored and my class got canceled so I naturally decided to cook something, but alas, I had no idea what to cook so I turned to Google :D Happy 40th Anniversary Sesame Street BTW

Anyways I found a cool website called: Super Cook (www.supercook.com)
You tell the recipe engine what ingredients you have and it pulls up recipes with only those ingredients! Kinda fun :)

I came across Dutch Babies, read the instructions; looked easy enough, turned on some Owl City and set to work.

You need:
Preheat your oven to 425 and while you're waiting mix the salt, milk and flour until smooth.

add the sugar and eggs one at a time until each is blended well.

when the oven is warm melt the butter in your pan and when the butter is melted pour in the batter. Now you wait 25 min:
I literally sat on my kitchen floor looking through the oven door as my Dutch Babies baked, I'm such a little kid!
Once they finished I quickly opened the oven door only to get a blast of heat to the face and had to wait for the fog on my glasses to clear.
This is the result ^

after adding a little syrup the vote is in: I will certainly make these again and Griff will get to taste them :) plus they have the Carbs for quick energy and protein for muscle recovery (pretty much every meal includes chicken in one form or another for Griff).

Overall I would cook them for about 20 min and possibly use a smaller pan.

Details for those that would ask :)

So after that last post I realized that some of you may be really confused as to where Griff came from and all that stuff so I decided to tell you .... before you asked :) I'm great, I know ;)

Griff and I went to school together from the time he moved to Utah from Cali when he was about 14. I didn't really know him but I knew of him and always thought he was cute. In high school he had a girlfriend and I had a 'boyfriend' but we had some classes together and had plenty of opportunities to talk. We really got to know each other in our English class our senior year and dated a little after the year ended. I really do mean a little, he left shortly after graduation for his mission and I think we went on a grand total of 4 dates. We wrote back and forth for the two years that he was gone but he figured I'd be taken when he got back and I was scared to even consider dating him because he'd be so 'good' and I might not be at the same level.
Well I was taken when he got home but things weren't working out in that relationship and when it ended Griff was right there. We kept things simple at first, casual dates and hanging out for his birthday and then it accelerated like a rocket on it's way to the moon. (ok i realize how cheese that must sound but that's the best analogy I could come up with on the spot)
He's been teaching me Spanish and we read the scriptures in Spanish and English to help with the learning process. During fall football camp he'd call before going to bed and we'd read together over the phone. I love the little things we do together :)
For a while he'd travel back and forth from Salt Lake so that we could do things and when I could I'd drive up to see him after practice. I also got sick a few times and he'd come to see me and bring me medicine if we didn't have it, I loved the fact that every time he came he'd tell me how beautiful I was, I knew I didn't look good but it gave me one more reason to fall in love with him.
It wasn't long before we both knew that we would be getting married but we were both unsure if the other had an answer to that prayer yet. I finally moved back to Salt Lake and three days later we came to the conclusion that we both received the same answer and were definitely going to get married. Two days later classes started and my life became crazy! We talked to our families and set a date to be sealed in the Salt Lake Temple :) It became an official engagement on September 9th, 09/09/09.
Now we're finishing up wedding plans/going crazy trying to make wedding plans and still pass our classes.

Moral of the story: God moves in mysterious ways; neither one of us thought we'd be getting married this soon but when it's right it's right and it's best not to fight it.

The 4th of July and my favorite boy ever: Jack

So, today didn't go as originally planned but that's ok, life happens it's best not to fight it.

I've been with little Jack all day and he's been a cute little addition to my day. We had put him down for a nap and mom had left to take care of some things at my brothers apartment ( I'll explain in a min). He woke up screaming and was pointing around the guest bedroom/office I tried to figure out what was wrong but I couldn't so I did the next best thing and picked him and his goggy (Binky) and held him with me on the couch. He was soon sleeping in my lap and we both got an hour nap in the front room. I loved having him close and snuggled in my arms, I can't wait to have kids of my own someday and I'm going to miss him terribly when he goes to Ohio.
When he woke up for the second time he was crying and pointing again and we finally got it out of him that he wanted his mom, we showed him that her car was gone and that she wasn't there so he proceeded to point and cry. I asked him where he wanted to go and he pointed down the hall, then down the front entry way, out the door, down the steps, down the driveway, to the neighbors, across the street and another house down. It was funny to watch him as I would turn and ask "where now?" he'd think for a second and then give a full arm point in the direction of his choice.

Micah was also in a motorcycle accident today; I wasn't there but my dad was and thankfully there are no serious injuries. I guess he flipped his bike and it landed on top of him. He's in a lot of pain and it took the hospital a few good hours getting all the scrapes cleaned out before he could go home. I am truly thankful for friends, family and guardian angels. Micah's has been working overtime and I can't wait for the day that I can meet him and thank him for keeping my brother in my life. I think it's about time that Micah gives him a break tho ;)

Life as a Nanny :)

Ok, so first off I love my kids and secondly I'd like to give every mother that has helped raise me and anyone else in this world a huge thank you, I don't know how you do it but you're amazing and I just thought I'd let you know (especially my mom).

I was going to get some pictures up of the kids but that will have to wait till a time when I'm more awake.
